- 2 large sweet potatoes
- 1 cup crumbled feta cheese
- 1/4 cup honey
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh thyme (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into 1/2 inch rounds and place them on a baking sheet.
- Drizzle with olive oil, salt, and pepper, and toss to coat.
- Roast in the oven for 25-30 minutes, flipping halfway through, until tender and golden.
- In a bowl, mix the crumbled feta cheese and honey until well combined.
- Once the sweet potato rounds are done, remove them from the oven and let them cool slightly.
- Top each sweet potato round with a spoonful of the honey feta mixture.
- Garnish with fresh thyme if desired and serve warm.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the honey feta mixture.
- These can be made ahead of time and reheated before serving.
- Feel free to substitute goat cheese for feta if preferred.
