Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into 1/2 inch rounds and place them on a baking sheet.
  3. Drizzle with olive oil, salt, and pepper, and toss to coat.
  4. Roast in the oven for 25-30 minutes, flipping halfway through, until tender and golden.
