Ingredients

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, sauté onions and garlic until translucent.
  3. Add diced chicken and cook until browned.
  4. Stir in mushrooms and cook until softened.
  5. In a large bowl, combine cooked wild rice, chicken mixture, chicken broth, heavy cream, thyme, rosemary, salt, and pepper.
  6. Transfer the mixture to a greased casserole dish.
  7. If desired, sprinkle shredded cheese on top.
  8. Bake for 30-35 minutes or until heated through and bubbly.
