Ingredients

- 2 cups cooked wild rice
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, sauté onions and garlic until translucent.
- Add diced chicken and cook until browned.
- Stir in mushrooms and cook until softened.
- In a large bowl, combine cooked wild rice, chicken mixture, chicken broth, heavy cream, thyme, rosemary, salt, and pepper.
- Transfer the mixture to a greased casserole dish.
- If desired, sprinkle shredded cheese on top.
- Bake for 30-35 minutes or until heated through and bubbly.
Notes
- For a lighter version, substitute heavy cream with low-fat milk.
- Feel free to add your favorite vegetables for extra nutrition.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
