Description

Ingredients

  • 1/2 cup granulated sweetener (coconut sugar or monk fruit)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut oil (melted)
  • 1/4 cup cinnamon sugar (for coating)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine whole wheat flour, granulated sweetener, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together applesauce, almond milk, vanilla extract, and melted coconut oil until smooth.
  4. Gently combine wet and dry mixtures until a flexible dough forms.
  5. Roll small amounts of dough into bite-sized pieces.
  6. Line a baking sheet with parchment paper and arrange the bites with some space between them.
  7. Bake for 15-20 minutes until golden brown.
  8. Roll warm churro bites in cinnamon sugar immediately after baking.
  9. Serve warm and enjoy!

Notes

Churro bites can be made a day in advance and stored in an airtight container. Reheat in the oven for a few minutes to regain crispiness. You can also customize flavors by adding cocoa powder or flavored extracts.
