Ingredients

- 2 pounds of potatoes
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup diced green onions
- 1/2 cup diced celery
- 1/2 cup crushed pineapple, drained
- 1/4 cup diced red bell pepper
- 1/4 cup sweet pickle relish
- Salt and pepper to taste
Instructions
- Peel and dice the potatoes, then boil them in salted water until tender.
- Drain the potatoes and let them cool completely.
- In a large bowl, mix together the mayonnaise, sour cream, and sweet pickle relish.
- Add the cooled potatoes, green onions, celery, crushed pineapple, and red bell pepper to the bowl.
- Gently fold the ingredients together until well combined.
- Season with salt and pepper to taste.
- Cover and refrigerate for at least 2 hours before serving.
