Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas with melted butter.
  3. Add sugar, eggs, and vanilla extract to the banana mixture and stir until well combined.
  4. In another bowl, whisk together the baking soda, salt, and flour.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the crushed pineapple, shredded coconut, and macadamia nuts if using.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
