- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup coconut milk
- 1/2 cup sweetened shredded coconut
- 1/4 cup cornstarch
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In another bowl, mix melted butter and granulated sugar until well combined.
- Add eggs and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Pour the brownie batter into the prepared baking pan and spread evenly.
- In a separate bowl, whisk together coconut milk, shredded coconut, cornstarch, and powdered sugar until smooth.
- Pour the coconut mixture over the brownie batter in the pan.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before cutting into squares and serving.
Notes
- For a richer flavor, use dark chocolate cocoa powder.
- Store leftovers in an airtight container in the refrigerator.
