- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheese
- 1/2 cup salsa
- 4 large flour tortillas
- 1 tablespoon taco seasoning
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a skillet, heat olive oil over medium heat.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Stir in taco seasoning, salt, and pepper.
- Add cooked rice, black beans, and salsa to the skillet, mixing well.
- Warm tortillas in a separate pan or microwave.
- Place a portion of the beef mixture in the center of each tortilla.
- Sprinkle shredded cheese on top of the beef mixture.
- Fold the sides of the tortilla over the filling and roll it up tightly.
- Serve with additional salsa or toppings of your choice.
