Description

Experience the delightful flavors of grilled steak paired with creamy sauce and charred zucchini, perfect for any occasion.

Ingredients

Scale
  • 1 pound Flank, Ribeye, or New York Strip
  • 2 medium Zucchini
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 tablespoon Dijon Mustard (optional)
  • 1 cup Sour Cream or Greek Yogurt
  • 2 tablespoons Fresh Herbs (Chives or Parsley)
  • 2 cups Cooked Rice or Mashed Potatoes

Instructions

  1. Marinate the Steak: In a mixing bowl, combine olive oil, garlic powder, onion powder, and Dijon mustard. Add your steak and coat it well, letting it marinate for at least 30 minutes (or up to 4 hours in the fridge for deeper flavor).
  2. Prepare the Zucchini: Slice the zucchini lengthwise into thick strips. Brush with olive oil and sprinkle with salt and pepper. Set aside until ready to grill.
  3. Cook the Steak: Preheat your grill or grill pan over high heat. Sear the marinated steak for about 4-5 minutes per side for medium-rare, adjusting the time according to your desired doneness. Let it rest for a few minutes before slicing it thinly against the grain.
  4. Grill the Zucchini: While the steak rests, place the zucchini strips on the grill. Cook for about 3-4 minutes until tender and charred, flipping midway for even cooking.
  5. Make the Sauce: In a bowl, combine sour cream or Greek yogurt with fresh herbs, stirring until smooth. Season with salt and pepper to taste, and add a splash of lemon juice for brightness, if desired.
  6. Assemble Your Bowl: Serve your sliced steak over a bed of cooked rice or mashed potatoes. Arrange the grilled zucchini on the side, elegantly draping with the creamy sauce for a picturesque finish.

Notes

Marinate the steak a day in advance for maximum flavor. Customize with different vegetables or meats as preferred.
