Ingredients

  • 1 lb ground lamb
  • 2 pita breads
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Olive oil for brushing
  • Fresh parsley for garnish (optional)

Instructions

  1. In a mixing bowl, combine the ground lamb, finely chopped onion, minced garlic, cumin, coriander, paprika, cayenne, salt, and pepper. Use your hands to mix everything together until well combined.
  2. Cut each pita bread in half to create pockets.
  3. Gently stuff the lamb mixture into each pita pocket, pressing lightly to ensure they are filled but not overstuffed.
  4. Preheat your grill over medium heat and brush the grill grates with olive oil.
  5. Place the stuffed pitas on the grill and cook for 4-5 minutes on each side until golden and crispy.
  6. Remove the pitas from the grill and allow them to cool slightly.
  7. Garnish with fresh parsley if desired, and serve hot.

Notes

Avoid overstuffing the pita to prevent bursting while grilling. Let the arayes cool slightly before serving for a cleaner bite.
