  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup tzatziki sauce

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a saucepan, combine quinoa and water; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. In a skillet, heat olive oil over medium heat; add chicken, garlic powder, onion powder, oregano, salt, and pepper.
  5. Cook chicken until golden brown and cooked through, about 7-10 minutes.
  6. In a large bowl, combine cooked quinoa, chicken, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
  7. Serve with tzatziki sauce on top.
