Ingredients

- 1 cup quinoa
- 2 cups water
- 1 lb chicken breast, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/2 cup tzatziki sauce
Instructions
- Rinse the quinoa under cold water and drain.
- In a saucepan, combine quinoa and water; bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
- In a skillet, heat olive oil over medium heat; add chicken, garlic powder, onion powder, oregano, salt, and pepper.
- Cook chicken until golden brown and cooked through, about 7-10 minutes.
- In a large bowl, combine cooked quinoa, chicken, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
- Serve with tzatziki sauce on top.
Notes
- Feel free to add more vegetables like bell peppers or olives.
- Can be made ahead and stored in the refrigerator for up to 3 days.
- For a vegetarian option, substitute chicken with chickpeas.
