Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 egg
  • 1 cup orzo pasta
  • 1 lemon (zested and juiced)
  • 2 cups chicken broth
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, minced garlic, oregano, salt, pepper, and egg in a mixing bowl.
  3. Form the mixture into small meatballs and place them on a parchment-lined baking sheet.
  4. Bake for 20-25 minutes, or until golden brown and cooked through.
  5. Bring the chicken broth to a boil in a saucepan over medium-high heat.
  6. Add the orzo and cook according to package instructions until al dente.
  7. Drain the orzo and return it to the pot. Stir in the lemon juice and zest.
  8. Serve the meatballs on a bed of lemon orzo, garnishing with extra parsley if desired.
