- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 clove garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 egg
- 1 cup orzo pasta
- 1 lemon (zested and juiced)
- 2 cups chicken broth
- Olive oil for cooking
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, minced garlic, oregano, salt, pepper, and egg in a mixing bowl.
- Form the mixture into small meatballs and place them on a parchment-lined baking sheet.
- Bake for 20-25 minutes, or until golden brown and cooked through.
- Bring the chicken broth to a boil in a saucepan over medium-high heat.
- Add the orzo and cook according to package instructions until al dente.
- Drain the orzo and return it to the pot. Stir in the lemon juice and zest.
- Serve the meatballs on a bed of lemon orzo, garnishing with extra parsley if desired.
