Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, and nutmeg.
  3. In another bowl, cream the butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the molasses, coffee, and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fill the cupcake liners about 2/3 full with batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool completely before frosting.

  • For a stronger coffee flavor, use espresso instead of brewed coffee.
