- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup molasses
- 2 large eggs
- 1/2 cup milk
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
- In another bowl, cream the butter and brown sugar until light and fluffy.
- Add the molasses and eggs to the butter mixture, mixing well.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until just combined.
- Fill the cupcake liners about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the cupcakes cool completely before frosting.
- For the frosting, beat together cream cheese and butter until smooth, then add powdered sugar and vanilla extract.
- Frost the cooled cupcakes and enjoy!
