  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 2 large eggs
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, cream the butter and brown sugar until light and fluffy.
  4. Add the molasses and eggs to the butter mixture, mixing well.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until just combined.
  6. Fill the cupcake liners about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let the cupcakes cool completely before frosting.
  9. For the frosting, beat together cream cheese and butter until smooth, then add powdered sugar and vanilla extract.
  10. Frost the cooled cupcakes and enjoy!
