Description

Crispy, golden edges with a creamy, fluffy interior, these Garlic Parmesan Smashed Potatoes are bursting with flavor and perfect for any occasion.


Ingredients

  • 2 pounds baby potatoes
  • 4 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes.
  3. Drain and let them cool slightly.
  4. On a baking sheet, place the potatoes and gently smash each one with a fork or the bottom of a glass.
  5. In a small bowl, mix the olive oil, minced garlic, salt, and pepper.
  6. Brush the mixture over the smashed potatoes.
  7. Sprinkle grated Parmesan cheese on top of each potato.
  8. Bake in the preheated oven for 20-25 minutes or until golden and crispy.
  9. Garnish with fresh parsley if desired and serve warm.
