- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt & pepper, to taste
- 4 large potatoes, peeled and cubed
- ½ cup milk
- 4 tablespoons butter
- 4 sliced carrots
- 2 tablespoons honey
Instructions
- Preheat the oven to 400°F (200°C).
- Marinate the chicken by mixing olive oil, minced garlic, thyme, rosemary, salt, and pepper in a large bowl.
- Coat the chicken breasts in the mixture.
- Bake the chicken on a baking sheet for 25-30 minutes until it reaches 165°F (74°C).
- Boil the cubed potatoes in salted water for 15-20 minutes until fork-tender.
- Drain the potatoes and mash them with milk and butter, seasoning with salt and pepper.
- Boil the sliced carrots for 5-7 minutes until tender, then toss with honey and a tablespoon of butter.
- Plate the chicken with mashed potatoes and glazed carrots.
Notes
You can marinate the chicken overnight for enhanced flavor. If short on time, consider using an air fryer for the chicken.
