- 1 lb sirloin steak, cut into bite-sized pieces
- 1 lb baby potatoes, halved
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large pot, boil the halved baby potatoes until fork-tender, about 10-15 minutes.
- Drain the potatoes and let them cool slightly, then toss them with salt, pepper, and half of the melted butter.
- Spread the potatoes on a baking sheet and roast in the oven for 20-25 minutes until golden and crispy.
- While the potatoes are roasting, season the steak bites with salt, pepper, and thyme.
- In a skillet over medium-high heat, melt the remaining butter and add the minced garlic.
- Add the steak bites to the skillet and cook for 3-4 minutes until browned and cooked to your desired doneness.
- Once the steak is cooked, remove from heat and toss with the roasted potatoes.
- Garnish with fresh parsley before serving.
