Ingredients

- 2 pounds of potatoes
- 1 head of garlic
- 1/2 cup cream cheese
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup crumbled blue cheese
- Salt and pepper to taste
- 2 tablespoons butter
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap the head of garlic in aluminum foil and roast in the oven for 30-35 minutes until soft.
- Peel and chop the potatoes, then boil them in salted water until tender.
- Drain the potatoes and return them to the pot.
- Remove the roasted garlic from the oven, squeeze the cloves out of their skins, and add to the potatoes.
- Add cream cheese, sour cream, cheddar cheese, Parmesan cheese, blue cheese, butter, salt, and pepper to the potatoes.
- Mash the mixture until smooth and creamy.
- Serve warm, garnished with additional cheese if desired.
Notes
- For a lighter version, you can substitute Greek yogurt for sour cream.
- Feel free to adjust the types of cheese based on your preference.
- These mashed potatoes can be made ahead of time and reheated before serving.
