Ingredients

  • 2 pounds of potatoes
  • 1 head of garlic
  • 1/2 cup cream cheese
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup crumbled blue cheese
  • Salt and pepper to taste
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap the head of garlic in aluminum foil and roast in the oven for 30-35 minutes until soft.
  3. Peel and chop the potatoes, then boil them in salted water until tender.
  4. Drain the potatoes and return them to the pot.
  5. Remove the roasted garlic from the oven, squeeze the cloves out of their skins, and add to the potatoes.
  6. Add cream cheese, sour cream, cheddar cheese, Parmesan cheese, blue cheese, butter, salt, and pepper to the potatoes.
  7. Mash the mixture until smooth and creamy.
  8. Serve warm, garnished with additional cheese if desired.

Notes

  • For a lighter version, you can substitute Greek yogurt for sour cream.
