- 2 cups cooked chicken, shredded
- 1 cup corn, drained
- 1 cup black beans, drained and rinsed
- 1 bell pepper, diced
- 1 onion, diced
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- 1 can diced tomatoes with green chilies
- 1 tablespoon taco seasoning
- Salt and pepper, to taste
- Tortilla chips or tortillas, for layering
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the shredded chicken, corn, black beans, diced bell pepper, diced onion, sour cream, diced tomatoes with green chilies, taco seasoning, salt, and pepper in a large bowl.
- Layer tortilla chips or tortillas in a baking dish.
- Add half of the chicken mixture over the tortilla layer.
- Sprinkle half of the cheese on top of the chicken mixture.
- Repeat the layering with the remaining chicken mixture and cheese.
- Bake for 25-30 minutes, until the cheese is melted and bubbly.
- Cool slightly before serving.
Notes
Feel free to customize with additional vegetables or spices. This casserole can be made ahead and stored in the fridge or freezer for later.
