Description

A delightful and comforting casserole featuring tender chicken, hearty black beans, sweet corn, and zesty tomatoes, topped with creamy cheese and crispy tortilla chips.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup corn, drained
  • 1 cup black beans, drained and rinsed
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 can diced tomatoes with green chilies
  • 1 tablespoon taco seasoning
  • Salt and pepper, to taste
  • Tortilla chips or tortillas, for layering

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the shredded chicken, corn, black beans, diced bell pepper, diced onion, sour cream, diced tomatoes with green chilies, taco seasoning, salt, and pepper in a large bowl.
  3. Layer tortilla chips or tortillas in a baking dish.
  4. Add half of the chicken mixture over the tortilla layer.
  5. Sprinkle half of the cheese on top of the chicken mixture.
  6. Repeat the layering with the remaining chicken mixture and cheese.
  7. Bake for 25-30 minutes, until the cheese is melted and bubbly.
  8. Cool slightly before serving.

Notes

Feel free to customize with additional vegetables or spices. This casserole can be made ahead and stored in the fridge or freezer for later.
