Description

Delight in these roasted potatoes topped with crumbled feta, garlic, and oregano for a flavorful Mediterranean side dish.


Ingredients

  • 2 pounds of potatoes (Yukon Gold or red)
  • 1/4 cup olive oil
  • 3 cloves of garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup feta cheese, crumbled
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the potatoes into wedges or chunks.
  3. Combine olive oil, minced garlic, oregano, salt, and pepper in a large bowl.
  4. Add the potatoes to the bowl and toss until well coated.
  5. Spread the potatoes in a single layer on a baking sheet.
  6. Roast for 30 to 35 minutes, flipping halfway through.
  7. Remove from the oven and sprinkle with crumbled feta.
  8. Return to the oven for an additional 5 minutes.
  9. Garnish with parsley if desired and serve hot.

Notes

Optional: Use goat cheese for a tangy twist or add fresh herbs in place of dried.
