- 2 pounds of potatoes (Yukon Gold or red)
- 1/4 cup olive oil
- 3 cloves of garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup feta cheese, crumbled
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and cut the potatoes into wedges or chunks.
- Combine olive oil, minced garlic, oregano, salt, and pepper in a large bowl.
- Add the potatoes to the bowl and toss until well coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 30 to 35 minutes, flipping halfway through.
- Remove from the oven and sprinkle with crumbled feta.
- Return to the oven for an additional 5 minutes.
- Garnish with parsley if desired and serve hot.
Notes
Optional: Use goat cheese for a tangy twist or add fresh herbs in place of dried.
