  • ½ cup Monterey Jack cheese (shredded)

  • 2 tablespoons olive oil or butter
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Start by mixing your shredded chicken with chili powder, cumin, garlic powder, salt, and pepper.
  2. Dice the bell pepper and red onion into small, uniform pieces.
  3. Lay one tortilla flat and sprinkle half of the Mexican cheese blend on one half.
  4. Add the seasoned chicken followed by your diced vegetables and top with Monterey Jack cheese.
  5. Cover with the remaining Mexican cheese before folding the tortilla over.
  6. Heat your oil in the skillet over medium heat and cook quesadilla for 3-4 minutes on each side.
  7. Let the quesadillas rest for 2-3 minutes before slicing.
  8. Cut the quesadillas into triangular wedges and serve immediately.
