- 1½ cups Mexican cheese blend (shredded)
- ½ cup Monterey Jack cheese (shredded)
- 1 medium bell pepper, diced

- 2 tablespoons olive oil or butter
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- Salt and pepper, to taste
Instructions
- Start by mixing your shredded chicken with chili powder, cumin, garlic powder, salt, and pepper.
- Dice the bell pepper and red onion into small, uniform pieces.
- Lay one tortilla flat and sprinkle half of the Mexican cheese blend on one half.
- Add the seasoned chicken followed by your diced vegetables and top with Monterey Jack cheese.
- Cover with the remaining Mexican cheese before folding the tortilla over.
- Heat your oil in the skillet over medium heat and cook quesadilla for 3-4 minutes on each side.
- Let the quesadillas rest for 2-3 minutes before slicing.
- Cut the quesadillas into triangular wedges and serve immediately.
