A healthy twist on traditional guacamole, this Edamame Guacamole is packed with protein and served with fresh veggie dippers.
Ingredients

- 1 cup shelled edamame
- 1 ripe avocado
- 2 tablespoons lime juice
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cumin
- 1/4 cup chopped cilantro
- Assorted veggie dippers (carrots, cucumber, bell peppers)
Instructions
- In a food processor, combine the shelled edamame, avocado, lime juice, garlic, salt, pepper, and cumin.
- Blend until smooth and creamy.
- Stir in the chopped cilantro.
- Transfer the guacamole to a serving bowl.
- Serve with assorted veggie dippers.
Notes
- For a spicier version, add diced jalapeño.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
- Adjust lime juice to taste for desired tanginess.
