- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- Zest of 1 lemon
- Juice of 1 lemon
- 1 cup powdered sugar (for glaze)
- 2–3 tablespoons lemon juice (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease your loaf pan.
- In a large bowl, combine flour, sugar, baking powder, and salt. Stir until well mixed.
- In another bowl, whisk together butter, milk, eggs, vanilla, lemon zest, and lemon juice until smooth.
- Gradually pour wet ingredients into dry ingredients, stirring gently until combined.
- Fold in the blueberries gently with a rubber spatula.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes until a toothpick inserted comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack.
- To make the glaze, mix powdered sugar with lemon juice until smooth and drizzle over the cooled bread.
Notes
For an extra special touch, add a lemon glaze on top. You can refrigerate the batter overnight before baking for added convenience.
