Description

A delightful loaf of bread that combines the tartness of lemon with the sweetness of blueberries for a moist and flavorful treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan.
  2. In a large bowl, combine flour, sugar, baking powder, and salt. Stir until well mixed.
  3. In another bowl, whisk together butter, milk, eggs, vanilla, lemon zest, and lemon juice until smooth.
  4. Gradually pour wet ingredients into dry ingredients, stirring gently until combined.
  5. Fold in the blueberries gently with a rubber spatula.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes until a toothpick inserted comes out clean.
  8. Allow to cool in the pan for 10 minutes, then transfer to a wire rack.
  9. To make the glaze, mix powdered sugar with lemon juice until smooth and drizzle over the cooled bread.

Notes

For an extra special touch, add a lemon glaze on top. You can refrigerate the batter overnight before baking for added convenience.
