Delightful and colorful Jello meringue cookies with a crispy exterior and airy interior that melts in your mouth.
Ingredients

- 3 large egg whites (room temperature)
- ¾ cup granulated sugar
- 1 box (3 oz) flavored Jello powder (any flavor)
- ¼ teaspoon cream of tartar
- ½ teaspoon vanilla extract
Instructions
- Preheat your oven to 200°F (95°C) and line a baking sheet with parchment paper.
- In a clean, grease-free bowl, add the egg whites and beat on medium speed until frothy.
- Increase speed to high and add the cream of tartar, beating until soft peaks form.
- Gradually add the granulated sugar, one tablespoon at a time, mixing on high until the meringue is glossy and forms stiff peaks.
- Gently fold in the Jello powder and vanilla extract until well combined.
- Fit a piping bag with a star tip and pipe small mounds onto the lined baking sheet, leaving space between each mound.
- Bake for about 1½ hours or until dry to the touch and easily lifted off the parchment paper.
- Turn off the oven, crack the door open slightly, and let the cookies cool inside for 1 hour.
- Store in a sealed container at room temperature to keep crisp.
Notes
Best stored in a sealed container at room temperature for up to a week. Can be frozen with parchment paper layers to avoid sticking.
