Description

Delightful and colorful Jello meringue cookies with a crispy exterior and airy interior that melts in your mouth.


Ingredients

  • 3 large egg whites (room temperature)
  • ¾ cup granulated sugar
  • 1 box (3 oz) flavored Jello powder (any flavor)
  • ¼ teaspoon cream of tartar
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 200°F (95°C) and line a baking sheet with parchment paper.
  2. In a clean, grease-free bowl, add the egg whites and beat on medium speed until frothy.
  3. Increase speed to high and add the cream of tartar, beating until soft peaks form.
  4. Gradually add the granulated sugar, one tablespoon at a time, mixing on high until the meringue is glossy and forms stiff peaks.
  5. Gently fold in the Jello powder and vanilla extract until well combined.
  6. Fit a piping bag with a star tip and pipe small mounds onto the lined baking sheet, leaving space between each mound.
  7. Bake for about 1½ hours or until dry to the touch and easily lifted off the parchment paper.
  8. Turn off the oven, crack the door open slightly, and let the cookies cool inside for 1 hour.
  9. Store in a sealed container at room temperature to keep crisp.

Notes

Best stored in a sealed container at room temperature for up to a week. Can be frozen with parchment paper layers to avoid sticking.
