Description

A flavorful, one-pan meal featuring tender chicken over fluffy rice topped with creamy tzatziki.


Ingredients

  • 2 cups Long Grain White Rice (Jasmine or basmati)
  • 4 cups Chicken Broth
  • 2 pieces Boneless, Skinless Chicken Breasts
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Greek Yogurt
  • 2 cloves Minced Garlic
  • 1 cup Grated Cucumber
  • 2 tablespoons Dill
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Oregano
  • 1 teaspoon Paprika
  • 1 cup Cucumber Substitute (Diced zucchini or bell peppers)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the rice and chicken broth in a large mixing bowl.
  3. Rub olive oil, salt, pepper, paprika, and oregano onto the chicken breasts.
  4. Place the seasoned chicken on top of the rice in a baking dish.
  5. Cover with foil and bake for 35-40 minutes.
  6. Prepare the tzatziki sauce by combining Greek yogurt, minced garlic, grated cucumber, lemon juice, and dill.
  7. Remove the chicken from the oven, uncover the dish, and bake for an additional 10 minutes.
  8. Serve the chicken over the rice topped with tzatziki sauce.

Notes

Prepare tzatziki a day in advance for enhanced flavors. Store in an airtight container in the refrigerator.
