- 2 cups Long Grain White Rice (Jasmine or basmati)
- 4 cups Chicken Broth
- 2 pieces Boneless, Skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Greek Yogurt
- 2 cloves Minced Garlic
- 1 cup Grated Cucumber
- 2 tablespoons Dill
- 2 tablespoons Lemon Juice
- 1 teaspoon Oregano
- 1 teaspoon Paprika
- 1 cup Cucumber Substitute (Diced zucchini or bell peppers)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the rice and chicken broth in a large mixing bowl.
- Rub olive oil, salt, pepper, paprika, and oregano onto the chicken breasts.
- Place the seasoned chicken on top of the rice in a baking dish.
- Cover with foil and bake for 35-40 minutes.
- Prepare the tzatziki sauce by combining Greek yogurt, minced garlic, grated cucumber, lemon juice, and dill.
- Remove the chicken from the oven, uncover the dish, and bake for an additional 10 minutes.
- Serve the chicken over the rice topped with tzatziki sauce.
Notes
Prepare tzatziki a day in advance for enhanced flavors. Store in an airtight container in the refrigerator.
