- 1/2 cup unsweetened shredded coconut
- 1/2 cup dragon fruit puree
- 1/4 cup coconut milk
- 1/4 cup vegetable oil

- 1/2 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a cake pan.
- In a mixing bowl, combine flour, sugar, baking powder, and salt.
- In another bowl, whisk together eggs, coconut milk, vegetable oil, dragon fruit puree, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Fold in the shredded coconut.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For a more intense flavor, use fresh dragon fruit instead of puree.
- Top with whipped cream and additional shredded coconut for serving.
