- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 cup heavy cream
- 1 cup pistachio nuts, finely chopped
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ teaspoon salt
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add the heavy cream, chopped pistachios, eggs, vanilla extract, and salt. Mix until well combined.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set but slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Refrigerate for at least 4 hours or overnight before serving.
Notes
- For a stronger pistachio flavor, use pistachio extract in addition to the nuts.
- Top with whipped cream and additional chopped pistachios for garnish.
- Ensure all ingredients are at room temperature for best results.
