Instructions
- Combine the ingredients: In your slow cooker, combine 1 pound of beef stew meat, 1 cup of barley, 3 diced potatoes, 2 sliced carrots, and 1 chopped onion.
- Add liquids and seasonings: Pour in 4 cups of beef broth and 2 cups of water. Sprinkle in 1 teaspoon of garlic powder, 1 teaspoon of dried thyme, and a generous pinch of salt and pepper.
- Mix well: Use a wooden spoon to gently stir everything together, ensuring the ingredients are evenly distributed and the beef is nestled among the vegetables.
- Cook low and slow: Cover the slow cooker and set it to low, allowing it to work its magic for 480 minutes, or until the beef and vegetables are tender.
