Ingredients

  • 1 block firm tofu, pressed and sliced
  • 1 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten (or flax eggs for vegan option)
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese, shredded (or vegan cheese)
  • 4 sandwich rolls
  • Olive oil for frying
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Press the tofu to remove excess moisture and slice it into thick slabs.
  3. Set up a breading station with flour, beaten eggs, and breadcrumbs.
  4. Dip each tofu slice in flour, then in the egg, and finally coat with breadcrumbs.
  5. Heat olive oil in a skillet over medium heat and fry the breaded tofu until golden brown on both sides.
  6. Place the fried tofu on a baking sheet, top each slice with marinara sauce and mozzarella cheese.
  7. Bake in the oven for 10-15 minutes until the cheese is melted and bubbly.
  8. Assemble the sandwich by placing the crispy tofu on the rolls and adding any additional toppings you desire.
