Ingredients

  • 4 large russet potatoes
  • 1 cup cooked chili
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup cooked bacon bits (optional)
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt.
  4. Bake the potatoes for about 45-60 minutes, or until tender.
  5. Once baked, let the potatoes cool slightly, then cut them in half and scoop out some of the flesh.
  6. Brush the insides with olive oil and season with salt and pepper.
  7. Return the potato halves to the oven and bake for an additional 10-15 minutes until crispy.
  8. Remove from the oven and fill each potato skin with chili and cheese.
  9. Return to the oven until the cheese is melted and bubbly.
