Crispy Air Fryer Coconut Chicken Tenders are a delicious and healthy alternative to traditional fried chicken, served with a sweet and tangy pineapple sauce.

- 1 lb chicken tenders
- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- 2 eggs
- 1/2 cup all-purpose flour
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup pineapple chunks
- 1/4 cup honey
- 1 tbsp soy sauce
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, mix the flour, salt, and pepper.
- In another bowl, beat the eggs.
- In a third bowl, combine the shredded coconut and panko breadcrumbs.
- Dip each chicken tender in the flour mixture, then the egg, and finally coat with the coconut mixture.
- Place the coated chicken tenders in the air fryer basket in a single layer.
- Cook for 10-12 minutes, flipping halfway through, until golden brown and cooked through.
- While the chicken is cooking, prepare the pineapple sauce by blending pineapple chunks, honey, and soy sauce until smooth.
- Serve the crispy chicken tenders with the pineapple sauce on the side.
Notes
- For extra crunch, you can double coat the chicken tenders.
- Adjust the sweetness of the sauce by adding more or less honey.
- Make sure not to overcrowd the air fryer basket for even cooking.
