Crispy Air Fryer Coconut Chicken Tenders are a delicious and healthy alternative to traditional fried chicken, served with a sweet and tangy pineapple sauce.


Ingredients

  • 1 lb chicken tenders
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup pineapple chunks
  • 1/4 cup honey
  • 1 tbsp soy sauce

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, mix the flour, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. In a third bowl, combine the shredded coconut and panko breadcrumbs.
  5. Dip each chicken tender in the flour mixture, then the egg, and finally coat with the coconut mixture.
  6. Place the coated chicken tenders in the air fryer basket in a single layer.
  7. Cook for 10-12 minutes, flipping halfway through, until golden brown and cooked through.
  8. While the chicken is cooking, prepare the pineapple sauce by blending pineapple chunks, honey, and soy sauce until smooth.
  9. Serve the crispy chicken tenders with the pineapple sauce on the side.

Notes

  • For extra crunch, you can double coat the chicken tenders.
  • Adjust the sweetness of the sauce by adding more or less honey.
