Description
A comforting and creamy casserole filled with winter vegetables, perfect for warming up during the colder months.
Ingredients

- 2 cups of broccoli florets
- 2 cups of cauliflower florets
- 1 cup of carrots, sliced
- 1 cup of green beans, trimmed
- 1 cup of mushrooms, sliced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 cups of heavy cream
- 1 cup of grated cheese (cheddar or your choice)
- 1 teaspoon of thyme
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 cup of breadcrumbs
Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, steam the broccoli, cauliflower, carrots, and green beans until just tender.
- In a skillet, sauté the onion and garlic until translucent.
- Add the mushrooms to the skillet and cook until soft.
- In a large bowl, combine the steamed vegetables, sautéed onion and garlic, heavy cream, cheese, thyme, salt, and pepper.
- Transfer the mixture to a greased baking dish and top with breadcrumbs.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Feel free to substitute any of the vegetables with your favorites.
- This dish can be made ahead of time and stored in the refrigerator before baking.
- For a lighter version, you can use half-and-half instead of heavy cream.
