- 2 cups ripe tomatoes, chopped
- 1 head of garlic, roasted
- 1 medium onion, diced
- 2 tablespoons olive oil
- 2 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Spread the chopped tomatoes and whole garlic head on a baking sheet, drizzle with olive oil, and roast for 25-30 minutes.
- In a pot, sauté the diced onion until translucent.
- Add the roasted tomatoes and garlic to the pot, along with the vegetable broth.
- Simmer for 10 minutes, then blend until smooth.
- Stir in the heavy cream and season with salt and pepper.
- Serve hot, garnished with fresh basil.

- For a vegan version, substitute heavy cream with coconut cream.
