- 4 cups fresh corn kernels (about 6 ears of corn)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt to taste
- Chopped cilantro for garnish
Instructions
- In a large pot, bring water to a boil and add the corn kernels. Cook for about 5-7 minutes until tender.
- Drain the corn and let it cool slightly.
- In a large bowl, combine mayonnaise, sour cream, lime juice, chili powder, garlic powder, and salt.
- Add the cooked corn to the bowl and mix until well coated.
- Stir in crumbled cotija cheese.
- Serve in cups, garnished with additional cotija cheese, chili powder, and chopped cilantro.
Notes
- For a spicier version, add diced jalapeños to the mixture.
- Can be served warm or cold.
- Use fresh corn for the best flavor, but frozen corn can be used as a substitute.
