Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups ramen noodles
  • 1 cup sliced carrots
  • 1 cup broccoli florets
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Sauté the chicken: In a large pot, heat olive oil over medium heat. Add the chicken breasts, cooking until golden brown and no longer pink—around 5 to 7 minutes on each side. Remove the chicken and slice it into strips.
  2. Add garlic: In the same pot, retain the residual oil and toss in the minced garlic. Sauté for about a minute.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the ramen noodles, sliced carrots, and broccoli into the pot. Reduce heat and cook according to noodle directions.
  5. Stir in the heavy cream, return the sliced chicken, and season with salt and pepper.
  6. Ladle into bowls, garnishing with fresh green onions.

Notes

For a vegetarian option, substitute chicken with tofu.
