Ingredients

- 4 cups broccoli florets
- 1 cup chopped onion
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 large bread bowls
Instructions
- In a large pot, sauté the onion and garlic until translucent.
- Add the broccoli florets and vegetable broth, and bring to a boil.
- Reduce heat and simmer until the broccoli is tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream, cheddar cheese, salt, and pepper until the cheese is melted.
- Cut the tops off the bread bowls and hollow them out.
- Pour the soup into the bread bowls and serve immediately.
Notes
- For a thicker soup, reduce the amount of broth.
- Feel free to add other vegetables like carrots or cauliflower.
- Garnish with extra cheese or croutons if desired.
