  • 4 oz pancetta, diced

  • 1/4 cup honey
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface and place it in a tart pan.
  3. Slice the brie cheese and layer it evenly over the pastry.
  4. In a skillet, cook the diced pancetta until crispy, then add the fresh cranberries and thyme, cooking until the cranberries begin to burst.
  5. Spread the cranberry and pancetta mixture over the brie.
  6. Drizzle honey over the top.
