  • 3 tbsp. white sugar (granulated)
  • 1 large egg yolk
  • 1/2 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1/8 tsp. baking powder
  • Pinch of baking soda
  • 1/2 tsp. kosher salt
  • 1 cup unsalted butter (melted)
  • 1 1/2 cups white sugar (granulated)
  • 3/4 cup light brown sugar (packed)
  • 1 1/2 tsp. kosher salt
  • 1/4 cup corn powder (freeze-dried corn, ground to a fine powder)
  • 1/4 cup milk powder
  • 3/4 cup heavy cream
  • 1/2 tsp. vanilla extract
  • 8 large egg yolks

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the Oat Cookie Crust by whisking together melted butter, light brown sugar, and kosher salt until smooth.
  3. Stir in the oat cookie mixture until thick.
  4. Press the mixture into a 9-inch pie dish and bake for 10-12 minutes until golden.
  5. Allow to cool completely.
  6. Cream together softened butter, light brown sugar, and granulated sugar until fluffy.
  7. Add the large egg yolk and mix until incorporated.
  8. In a separate bowl, whisk together flour, oats, baking powder, baking soda, and kosher salt.
  9. Gradually fold this dry mixture into the creamy butter mixture.
  10. Add melted butter, heavy cream, corn powder, milk powder, and vanilla extract, blending until smooth.
  11. Pour the filling into the crust, smoothing the top.
  12. Bake for 30-40 minutes until it sets with a slight jiggle.
  13. Cool at room temperature then refrigerate for at least 4 hours.
  14. Dust with confectioners’ sugar before serving.
