- 1 cup jasmine rice
- 1 cup coconut milk
- 1 cup water
- 1/2 teaspoon salt
- 1 tablespoon sugar (optional)
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, and sugar.
- Bring the mixture to a boil over medium heat.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork before serving.
Notes
- For added flavor, you can include a pandan leaf while cooking.
- Serve with grilled meats or seafood for a complete meal.
- Leftover coconut rice can be stored in the refrigerator for up to 3 days.
