A light and airy dessert that combines the tropical flavors of coconut and mango in a delicious mousse cake.

- 1 cup coconut milk
- 1 cup mango puree
- 1/2 cup sugar
- 1/4 cup gelatin
- 1 cup heavy cream
- 1/2 cup shredded coconut
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a saucepan, combine coconut milk, sugar, and salt over medium heat until sugar dissolves.
- Sprinkle gelatin over the mixture and stir until fully dissolved.
- Remove from heat and let cool slightly before adding mango puree and vanilla extract.
- In a separate bowl, whip heavy cream until soft peaks form.
- Gently fold the whipped cream into the mango-coconut mixture.
- Stir in shredded coconut.
- Pour the mixture into a cake mold and refrigerate for at least 4 hours or until set.
- Once set, remove from mold and serve chilled.
Notes
- For a more intense mango flavor, use fresh mango puree.
- Can be garnished with additional shredded coconut or fresh mango slices.
- Ensure the gelatin is fully dissolved to avoid lumps in the mousse.
