Instructions

  1. In a saucepan, combine coconut milk, sugar, and salt over medium heat until sugar dissolves.
  2. Sprinkle gelatin over the mixture and stir until fully dissolved.
  3. Remove from heat and let cool slightly before adding mango puree and vanilla extract.
  4. In a separate bowl, whip heavy cream until soft peaks form.
  5. Gently fold the whipped cream into the mango-coconut mixture.
  6. Stir in shredded coconut.
  7. Pour the mixture into a cake mold and refrigerate for at least 4 hours or until set.
  8. Once set, remove from mold and serve chilled.
