Instructions
- Preheat the oven to 350°F (175°C) and grease a sheet cake pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the lime zest and lime juice.
- In another bowl, whisk together the flour, baking powder, salt, and shredded coconut.
- Gradually add the dry ingredients to the wet mixture, alternating with the coconut milk, and mix until just combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely before frosting.
- For the frosting, whip heavy cream until soft peaks form, then gradually add powdered sugar and continue to whip until stiff peaks form.
- Spread the whipped frosting over the cooled cake and garnish with additional shredded coconut and lime zest if desired.

- For a stronger lime flavor, add more lime zest.
- This cake can be made a day in advance and stored in the refrigerator.
