Ingredients

- 1 cup quinoa
- 2 cups water
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 bell pepper, diced
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water for a minute.
- Combine the rinsed quinoa and 2 cups of water in a medium saucepan.
- Bring the mixture to a brisk boil.
- Reduce the heat to low, cover, and let it simmer for about 15 minutes.
- Remove from heat and let the quinoa cool to room temperature.
- Combine the cooled quinoa with cilantro, lime juice, bell pepper, cucumber, and cherry tomatoes in a large mixing bowl.
- Season with salt and pepper to taste.
- Chill in the refrigerator for an hour or serve immediately.
