Instructions
- Preheat the oven to 350°F (175°C) and grease a jelly roll pan.
- In a bowl, mix flour, cocoa powder, baking powder, and salt.
- In another bowl, beat eggs and sugar until light and fluffy.
- Add vanilla and peppermint extracts to the egg mixture.
- Gradually fold in the dry ingredients until just combined.
- Spread the batter evenly in the prepared pan.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Let the cake cool for a few minutes, then invert onto a clean kitchen towel dusted with powdered sugar.
- Roll the cake with the towel and let it cool completely.
- For the filling, whip heavy cream and powdered sugar until stiff peaks form.
- Unroll the cooled cake, spread the whipped cream filling, and sprinkle with crushed peppermint candies.
- Roll the cake back up and refrigerate for at least 1 hour.
- Melt chocolate with vegetable oil and drizzle over the rolled cake before serving.
