Ingredients

  • 1 cup honey
  • 1 cup apple cider vinegar
  • 2 tablespoons chili flakes
  • 1 teaspoon salt

  • 1 clove garlic, minced

Instructions

  1. In a large bowl, combine the sliced zucchinis with salt and let them sit for 30 minutes to draw out moisture.
  2. In a saucepan, combine honey, apple cider vinegar, chili flakes, black pepper, and minced garlic. Bring to a simmer over medium heat.
  3. Once the mixture is simmering, remove it from heat and let it cool slightly.
  4. Pack the zucchini slices into sterilized jars and pour the honey mixture over them, ensuring they are fully submerged.
  5. Seal the jars and refrigerate for at least 24 hours before serving to allow the flavors to meld.
