- 2 medium zucchinis, sliced
- 1 cup honey
- 1 cup apple cider vinegar
- 2 tablespoons chili flakes
- 1 teaspoon salt
- 1 teaspoon black pepper

Instructions
- In a large bowl, combine the sliced zucchinis with salt and let them sit for 30 minutes to draw out moisture.
- In a saucepan, combine honey, apple cider vinegar, chili flakes, black pepper, and minced garlic. Bring to a simmer over medium heat.
- Once the mixture is simmering, remove it from heat and let it cool slightly.
- Pack the zucchini slices into sterilized jars and pour the honey mixture over them, ensuring they are fully submerged.
- Seal the jars and refrigerate for at least 24 hours before serving to allow the flavors to meld.

- For a spicier version, increase the amount of chili flakes.
- These pickles can be stored in the refrigerator for up to 2 weeks.
