Ingredients

- 4 large russet potatoes
- 2 cups chili (homemade or canned)
- 2 cups shredded cheddar cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional toppings: sour cream, green onions, jalapeños
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and cut the russet potatoes into fries.
- Toss the fries in olive oil, salt, and pepper.
- Spread the fries on a baking sheet and bake for 30-35 minutes until golden and crispy.
- While the fries are baking, heat the chili in a saucepan over medium heat.
- Once the fries are done, remove them from the oven and layer the chili over the fries.
- Sprinkle the shredded cheddar cheese on top of the chili.
- Return to the oven for an additional 5-10 minutes until the cheese is melted.
- Serve hot with optional toppings as desired.
Notes
- For a healthier version, consider baking the fries instead of frying.
- Feel free to customize the chili with your favorite ingredients.
- These can be made vegetarian by using meatless chili.
