Description

A savory chicken zucchini bake that combines tender chicken, vibrant zucchini, and sweet bell peppers in a creamy, cheesy embrace.


Ingredients

  • 2 lbs boneless, skinless chicken breasts, cubed
  • 2 medium zucchinis, sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat one tablespoon of olive oil in a large skillet over medium heat.
  3. Add the cubed chicken breasts to the skillet; cook until golden brown, about 5-7 minutes. Remove and set aside.
  4. In a large mixing bowl, mix the sliced zucchinis, diced bell peppers, garlic powder, onion powder, oregano, basil, salt, and pepper with the remaining tablespoon of olive oil.
  5. Arrange half of the vegetable mixture at the bottom of a baking dish.
  6. Layer the browned chicken over the vegetables; then pour the marinara sauce evenly on top.
  7. Top with the remaining vegetable mixture.
  8. Sprinkle mozzarella and parmesan cheese across the top.
  9. Cover with aluminum foil and bake for 20 minutes.
  10. Remove the foil and continue baking for another 10-15 minutes until cheese is golden brown.
  11. Let cool for 5 minutes before serving.
