Ingredients

  • 1 pound chicken breast, diced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 6 cups chicken broth
  • 2 cups mixed vegetables (e.g., green beans, peas, corn)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion, sliced carrots, and chopped celery. Sauté until vegetables soften, about 5-6 minutes.
  2. Add the minced garlic and cook for another minute, stirring until fragrant.
  3. Include the diced chicken to the pot. Cook until no longer pink, about 5-7 minutes, stirring occasionally.
  4. Pour in the chicken broth, followed by the mixed vegetables, dried thyme, salt, and pepper. Stir to combine.
  5. Bring the soup to a gentle boil, then reduce heat and simmer for 20-30 minutes.
  6. Taste the soup and adjust seasoning as needed. Just before serving, sprinkle the chopped parsley on top.

Notes

This soup can be made ahead of time and tastes even better the next day. It holds up well in the fridge for up to 4 days or can be frozen for up to 3 months.
