- 1 lb chicken breast, cut into strips
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp vegetable oil
- 1 tsp garlic, minced
- 1 tsp ginger, minced
- 1/2 cup peanut butter
- 1/4 cup coconut milk
- 2 tbsp lime juice
- 1 tbsp soy sauce (for sauce)
- 1 tbsp honey
- 1/4 tsp red pepper flakes (optional)
Instructions
- In a bowl, mix soy sauce, brown sugar, vegetable oil, garlic, and ginger to create a marinade.
- Add chicken strips to the marinade and let it sit for at least 30 minutes.
- While the chicken is marinating, prepare the peanut sauce by combining peanut butter, coconut milk, lime juice, soy sauce, honey, and red pepper flakes in a saucepan over low heat. Stir until smooth.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated chicken onto skewers.
- Grill the chicken skewers for about 5-7 minutes on each side or until fully cooked.
- Serve the chicken satay with the peanut sauce on the side for dipping.
Notes
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Adjust the spiciness of the peanut sauce by adding more or less red pepper flakes.
- This dish can be served with rice or salad for a complete meal.
