Ingredients

  • 1 lb chicken breast, cut into strips
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp vegetable oil
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced
  • 1/2 cup peanut butter
  • 1/4 cup coconut milk
  • 2 tbsp lime juice
  • 1 tbsp soy sauce (for sauce)
  • 1 tbsp honey
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. In a bowl, mix soy sauce, brown sugar, vegetable oil, garlic, and ginger to create a marinade.
  2. Add chicken strips to the marinade and let it sit for at least 30 minutes.
  3. While the chicken is marinating, prepare the peanut sauce by combining peanut butter, coconut milk, lime juice, soy sauce, honey, and red pepper flakes in a saucepan over low heat. Stir until smooth.
  4. Preheat the grill or grill pan over medium-high heat.
  5. Thread the marinated chicken onto skewers.
  6. Grill the chicken skewers for about 5-7 minutes on each side or until fully cooked.
  7. Serve the chicken satay with the peanut sauce on the side for dipping.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
