Description

Chicken Pho (Phở Gà) is a traditional Vietnamese noodle soup made with chicken, herbs, and rice noodles, known for its aromatic broth and fresh ingredients.


Ingredients

  • 1 whole chicken (about 34 lbs)
  • 1 onion, halved
  • 1 piece of ginger (about 3 inches), sliced
  • 23 star anise
  • 1 cinnamon stick
  • 45 cloves
  • 1 tablespoon coriander seeds
  • 1 tablespoon fish sauce
  • Salt to taste
  • 8 cups water
  • 8 oz rice noodles
  • Fresh herbs (basil, cilantro, green onions)
  • Lime wedges
  • Bean sprouts

Instructions

  1. In a large pot, add the whole chicken, onion, ginger, and water. Bring to a boil.
  2. Skim off any foam that rises to the surface.
  3. Add star anise, cinnamon stick, cloves, coriander seeds, fish sauce, and salt.
  4. Reduce heat and let it simmer for about 30-40 minutes until the chicken is cooked through.
  5. Remove the chicken and let it cool. Strain the broth and return it to the pot.
  6. Shred the chicken meat and set aside.
  7. Cook the rice noodles according to package instructions and drain.
  8. To serve, place noodles in a bowl, top with shredded chicken, and pour hot broth over it.
  9. Garnish with fresh herbs, lime wedges, and bean sprouts.

Notes

  • For a richer broth, you can roast the onion and ginger before adding them to the pot.
  • Adjust the seasoning according to your taste.
  • Feel free to add other toppings like chili or hoisin sauce.
