Description
Chicken Pho (Phở Gà) is a traditional Vietnamese noodle soup made with chicken, herbs, and rice noodles, known for its aromatic broth and fresh ingredients.

- 1 whole chicken (about 3–4 lbs)
- 1 onion, halved
- 1 piece of ginger (about 3 inches), sliced
- 2–3 star anise
- 1 cinnamon stick
- 4–5 cloves
- 1 tablespoon coriander seeds
- 1 tablespoon fish sauce
- Salt to taste
- 8 cups water
- 8 oz rice noodles
- Fresh herbs (basil, cilantro, green onions)
- Lime wedges
- Bean sprouts
Instructions
- In a large pot, add the whole chicken, onion, ginger, and water. Bring to a boil.
- Skim off any foam that rises to the surface.
- Add star anise, cinnamon stick, cloves, coriander seeds, fish sauce, and salt.
- Reduce heat and let it simmer for about 30-40 minutes until the chicken is cooked through.
- Remove the chicken and let it cool. Strain the broth and return it to the pot.
- Shred the chicken meat and set aside.
- Cook the rice noodles according to package instructions and drain.
- To serve, place noodles in a bowl, top with shredded chicken, and pour hot broth over it.
- Garnish with fresh herbs, lime wedges, and bean sprouts.
Notes
- For a richer broth, you can roast the onion and ginger before adding them to the pot.
- Adjust the seasoning according to your taste.
- Feel free to add other toppings like chili or hoisin sauce.
