- 1 lb ground chicken
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 tablespoon toasted rice powder
- 1/2 cup chopped fresh mint
- 1/2 cup chopped cilantro
- 1/4 cup sliced green onions
- 1 small red chili, finely chopped (optional)
- 1 head of lettuce, for serving
Instructions
- In a skillet over medium heat, cook the ground chicken until fully cooked.
- In a bowl, mix the cooked chicken with fish sauce, lime juice, and toasted rice powder.
- Add the chopped mint, cilantro, green onions, and red chili to the chicken mixture.
- Toss everything together until well combined.
- Serve the chicken larb in lettuce leaves as wraps.
Notes
- Adjust the spice level by adding more or less chili.
- Toasted rice powder can be made by toasting uncooked rice in a pan and grinding it.
- This dish is best served fresh but can be stored in the refrigerator for a day.
