Description

Chicken Larb is a flavorful Thai salad made with minced chicken, fresh herbs, and a zesty lime dressing.


Ingredients

  • 1 lb ground chicken
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon toasted rice powder
  • 1/2 cup chopped fresh mint
  • 1/2 cup chopped cilantro
  • 1/4 cup sliced green onions
  • 1 small red chili, finely chopped (optional)
  • 1 head of lettuce, for serving

Instructions

  1. In a skillet over medium heat, cook the ground chicken until fully cooked.
  2. In a bowl, mix the cooked chicken with fish sauce, lime juice, and toasted rice powder.
  3. Add the chopped mint, cilantro, green onions, and red chili to the chicken mixture.
  4. Toss everything together until well combined.
  5. Serve the chicken larb in lettuce leaves as wraps.

Notes

  • Adjust the spice level by adding more or less chili.
  • Toasted rice powder can be made by toasting uncooked rice in a pan and grinding it.
  • This dish is best served fresh but can be stored in the refrigerator for a day.
