Description

Ingredients

  • 400ml coconut milk
  • 750ml chicken broth
  • 2 tablespoons laksa paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • Fresh cilantro, for garnish
  • Bean sprouts, for garnish
  • Chili slices, for garnish

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a large pot, heat the chicken broth and bring to a simmer.
  3. Add the laksa paste and stir until well combined.
  4. Pour in the coconut milk and bring the mixture back to a simmer.
  5. Add the sliced chicken and cook until fully cooked through.
  6. Stir in the fish sauce and lime juice.
  7. Divide the cooked noodles into bowls and ladle the soup over the noodles.
  8. Garnish with fresh cilantro, bean sprouts, and chili slices before serving.

Notes

  • Adjust the spiciness by adding more or less laksa paste.
