- 200g rice noodles
- 300g chicken breast, sliced
- 400ml coconut milk
- 750ml chicken broth
- 2 tablespoons laksa paste
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- Fresh cilantro, for garnish
- Bean sprouts, for garnish
- Chili slices, for garnish
Instructions
- Cook the rice noodles according to package instructions, then drain and set aside.
- In a large pot, heat the chicken broth and bring to a simmer.
- Add the laksa paste and stir until well combined.
- Pour in the coconut milk and bring the mixture back to a simmer.
- Add the sliced chicken and cook until fully cooked through.
- Stir in the fish sauce and lime juice.
- Divide the cooked noodles into bowls and ladle the soup over the noodles.
- Garnish with fresh cilantro, bean sprouts, and chili slices before serving.
Notes
- Adjust the spiciness by adding more or less laksa paste.
- For a vegetarian version, substitute chicken with tofu and use vegetable broth.
- Serve with lime wedges for an extra zesty flavor.
